Ingredients

  • 1 c. Beef broth
  • 1/2 c. Red wine vinegar
  • 1 tsp Poultry seasoning
  • 1 x Bay leaf
  • 1/2 tsp Pepper
  • 1 tsp Salt
  • 1 Tbsp. Dry mustard
  • 1 x Clove garlic, chopped
  • 3 lb Eye of round roast, up to 4

Directions

  1. Combine all ingredients except meat in saucepan. Place over medium temperature till thoroughly heated. Place meat in a bowl. Pour mix over meat. Cover and chill for 24-48 hrs. Roast the beef at 350 degrees for 2 1/2-3 hrs or possibly till desired doneness. Drippings can be used to make gravy and are tasty served with egg noodles.
  2. Yield: 6-8 servings
