Russian Honey And Dried Fruit Bread

Ingredients

  • 2/3 c. Honey
  • 1/2 tsp Cinnamon
  • 1/4 tsp Each: grnd cloves, grnd nutmeg
  • 1/2 tsp Baking soda
  • 1/4 c. Margarine, softened
  • 2 x Large eggs, separated
  • 1/2 c. Buttermilk
  • 1/2 c. Raisins
  • 1/4 c. Minced pitted dates
  • 1/4 c. Minced apricots
  • 1/2 c. Minced walnuts
  • 1 3/4 c. Whole wheat pastry flour
  • 1 1/2 tsp Baking pwdr
  • 1/2 tsp Salt

Russian Honey And Dried Fruit Bread

Directions

  1. Preheat the oven to 325 deg.
  2. In a small saucepan, heat the honey, bringing it just to the boiling point.
  3. Remove from heat and stir in the spices and baking soda.
  4. In a mixing bowl, cream the margarine and stir in the egg yolks, one at a time. Beat in the buttermilk till smooth. Add in the honey mix and fold in thoroughly, then stir in the dry fruit and nuts.
  5. In a large mixing bowl, combine the flour, baking pwdr and salt. Make a well in the center and pour in the honey mix. Stir together vigorously till thoroughly combined. Beat the egg whites till stiff, then fold inot the batter. Pour into an oiled 9 by 5 by 3 inch loaf pan. Bake for 55 min, or possibly till a knife inserted into the center test clean. Cold on a rack, then cover tightly with foil to store.
  6. Makes 1 loaf.
