- 1/2 c. Green bell pepper, minced
- 1/2 c. Mushroom, minced
- 2 x Garlic clove, chopped
- 4 ounce Potato, cooked, cubed

Directions
- 1. In small bowl, combine egg whites, egg, salt, and pepper.
- 2. In medium nonstick skillet, heat oil; add in red and green bell peppers, mushrooms, and garlic. Cook over medium-high heat, stirring occasionally, 2 min. Add in potato; cook till browned, about 2 min.
- 3. Pour in egg mix; cook, stirring constantly, till Large eggs are just set, about 1 minute.
