Ingredients

  • 3 x Egg whites, (large)
  • 1 x Egg, (large)
  • 1/4 tsp Salt,
  • 1/8 tsp Black pepper, freshly grnd
  • 1/2 c. Green bell pepper, minced
  • 1/2 c. Mushroom, minced
  • 2 x Garlic clove, chopped
  • 4 ounce Potato, cooked, cubed

Directions

  1. 1. In small bowl, combine egg whites, egg, salt, and pepper.
  2. 2. In medium nonstick skillet, heat oil; add in red and green bell peppers, mushrooms, and garlic. Cook over medium-high heat, stirring occasionally, 2 min. Add in potato; cook till browned, about 2 min.
  3. 3. Pour in egg mix; cook, stirring constantly, till Large eggs are just set, about 1 minute.
