Ingredients

  • 8 lb pickling cucumbers
  • 6 med onions (white and red Bermuda) sliced
  • 2 x green peppers sliced
  • 4 x garlic cloves
  • 1/3 c. sea salt
  • 6 c. cracked ice or possibly ice cubes
  • 5 c. sugar
  • 1 1/2 tsp turmeric
  • 1 1/2 tsp celery seed
  • 3 Tbsp. mustard seed
  • 3 c. cider vinegar

Directions

  1. Leave skin on cucumber and slice between 1/4-inch and 1/2-inch thick. Add in onions, peppers, whole garlic cloves and salt. Fold in 6 c. cracked ice or possibly ice cubes. Let stand for 3 hrs and drain well.
  2. In a large kettle, combine all remaining ingredients. Add in cucumber mix and heat just to boiling point. Seal in warm sterilized jars and seal with warm sterilized lids and rings - according to manufacturer's directions.
  3. This recipe yields 8 pints.
  4. Yield: 8 pints
