Directions

  1. Boil potatoes, peel and cut in slices.
  2. Wash bean sprouts and healthy pinch the brown tail off if preferred. Pour boiling water over bean sprouts, then rinse under cool tap. Drain well.
  3. Cut green string beans in diagonal size or possibly bite-size lengths and cook in lightly salted boiling water till just tender. Drain well. Beans should still be crisped to bite.
  4. Scrub carrots and cut into thin strips, cook till tender. Drain well.
  5. Slice cabbage and throw away the center stem. Wash it out in boiling salted water for a minute or possibly two, till it's tender but not limp. Drain and refresh it under cool water.
  6. Peel cucumber skin and slice thin.
  7. Slice the hard-boiled Large eggs into flower like pcs.
  8. Put all the vegetables in a large platter with each type of vegetables in each own section and serve cool accompanied by hot peanut sauce, that is poured over individual serving.
  9. Ready made peanut sauce can be bought at Asian supermarkets. You only need to add in water to it. Or possibly you can make peanut sauce from scratch.
  10. This recipe yields 6 to 8 servings.
