,%20instead%20of%20my%20previous%20plan%20of%20scrounging%20around%20with%20leftovers.%20She%E2%80%99s%20a%20starving%20college%20student,%20afterall,%20and%20Chanel%20deserves%20a%20little%20bit%20better%20than%20that%20when%20she%20comes%20to%20see%20her%20big%20sister.%3C/p%3E%3Cp%3ELast%20Minute%20Dinner%20Made%20Easy%3C/p%3E%3Cp%3EI%20keep%20these%20McCormick%20Gourmet%20spice%20packets%20on%20hand%20for%20occasions%20just%20like%20these.%20They%E2%80%99re%20super-flavorful%20so%20they%20make%20everyday%20meals%20and%20last%20minute%20dinner%20a%20breeze.%20I%20don%E2%80%99t%20even%20have%20to%20think%20about%20spices%20or%20what%20flavors%20go%20well%20with%20what%20ingredients.%20They%20have%20a%20recipe%20on%20the%20back%20with%20the%20a%20full%20list%20of%20suggested%20meat,%20veggies%20and%20liquids%20such%20as%20butter,%20olive%20oil,%20cream,%20etc%20to%20complete%20your%20meal.%20I%20was%20going%20to%20make%20two%20separate%20chicken%20dishes%20for%20Chanel%E2%80%99s%20visit,%20Chicken%20Penne%20and%20Bruschetta%20Chicken,%20but%20I%20ran%20out%20of%20time%20to%20go%20to%20the%20grocery%20store%20(Some%20Boy%20had%20a%20full-blown%20teething%20meltdown%20that%20severely%20cut%20into%20our%20afternoon).%20I%20wound%20up%20winging%20it%20and%20combining%20the%20two%20sauce%20packets%20along%20with%20random%20stuff%20I%20found%20in%20our%20refrigerator%20for%20my%20own%20McCormick%20last%20minute%20dinner.%20It%20was%20a%20huge%20hit!%3C/p%3E%3Cp%3ELast%20Minute%20McCormick%20Meal%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ECook%20the%20pasta%20in%20boiling%20water%20approximately%208-10%20minutes%20until%20soft.%20Drain.%3C/p%3E%3Cp%3EWhile%20pasta%20is%20cooking,%20heat%20olive%20oil%20in%20a%20large%20skillet.%20Add%20chicken%20and%20cook%20over%20medium-high%20heat,%20stirring%20occasionally,%20approximately%207%20minutes%20until%20lightly%20browned.%3C/p%3E%3Cp%3EAdd%20both%20spice%20packets,%20tomatoes,%20cream%20cheese,%20milk%20and%20parmesan%20to%20chicken.%20Stir%20and%20simmer%20on%20medium-low%20approximately%205%20minutes.%20Add%20more%20milk%20to%20thin%20the%20mixture%20if%20it%20thickens%20too%20much.%3C/p%3E%3Cp%3EStir%20chicken%20mixture%20into%20pasta%20and%20serve%20immediately.%3C/p%3E%3Cp%3E2.0%3C/p%3E%3Cp%3Ehttp://www.somedayilllearn.com/2012/09/last-minute-dinner/%3C/p%3E%3Cp%3ECopyright%20www.somedayilllearn.com%3C/p%3E%3Cp%3EOne%20of%20the%20key%20essentials%20to%20a%20last%20minute%20dinner:%20pasta!%3C/p%3E%3Cp%3EThe%20packets%20called%20for%20me%20to%20heat%20butter%20in%20a%20pan%20and%20cook%20sliced%20chicken%20in%20that,%20but%20I%20didn%E2%80%99t%20even%20have%20butter%20in%20the%20refrigerator.%20I%20really,%20really%20need%20to%20go%20shopping.%20Olive%20oil%20is%20a%20healthier%20substitute,%20anyway.%3C/p%3E%3Cp%3EThe%20McCormick%20packets%20both%20called%20for%20canned%20tomatoes,%20another%20thing%20I%20didn%E2%80%99t%20have.%20Instead,%20I%20used%20cherry%20tomatoes%20that%20were%20leftover%20from%20a%20veggie%20platter%20we%20had%20earlier%20in%20the%20week.%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20have%20cream,%20so%20I%20added%20cream%20cheese%20and%20milk%20with%20the%20tomatoes%20and%20spice%20packets%20for%20a%20rich,%20saucy%20chicken%20mixture.%3C/p%3E%3Cp%3EI%E2%80%99ve%20found%20that%20powdered%20parmesan%20cheese%20works%20fine%20as%20a%20stand-in%20for%20freshly%20grated%20parmesan%20cheese.%20Seriously.%20It%20does%20make%20the%20sauce%20a%20little%20thicker%20and%20doesn%E2%80%99t%20quite%20have%20that%20authentic%20parmesan%20taste,%20but%20milk%20can%20thin%20down%20any%20sauce%20that%20gets%20too%20thick.%20Last%20minute%20dinner%20at%20its%20finest.%3C/p%3E%3Cp%3ENate%20snapped%20a%20photo%20of%20me%20cooking.%20He%20thought%20it%20was%20hilarious%20that%20I%20totally%20fit%20the%20stereotype%20%E2%80%9Cpregnant,%20barefoot%20and%20in%20the%20kitchen.%E2%80%9D%20How%20cute%20is%20this%20apron%20that%20McCormick%20sent%20over?%20It%20barely%20fits%20around%20my%20gigantic%20belly%20right%20now,%20but%20is%20seriously%20one%20of%20the%20cutest%20aprons%20I%E2%80%99ve%20ever%20seen.%3C/p%3E%3Cp%3EWhile%20the%20pasta%20finished%20cooking%20and%20the%20chicken%20simmered,%20Chanel%20and%20I%20played%20with%20these%20hilarious%20question%20cards%20from%20our%20new%20Not%20Your%20Mom%E2%80%99s%20Dinner%20Party%20Table%20Topics%20set.%3C/p%3E%3Cp%3EWhen%20the%20chicken%20mixture%20and%20past%20were%20done,%20I%20threw%20them%20together.%20Easy%20peasy,%20last%20minute%20dinner.%3C/p%3E%3Cp%3EIt%20was%20a%20big%20hit,%20with%20no%20leftovers%20to%20speak%20of.%20Brian,%20Nate%20and%20Chanel%20all%20raved%20and%20went%20back%20for%20seconds.%20I%20love%20it%20when%20a%20refrigerator%20meal%20becomes%20a%20family%20favorite.%3C/p%3E%3Cp%3EWant%20it?%20Win%20your%20own%20kit%20to%20help%20elevate%20last%20minute%20dinners!%3C/p%3E%3Cp%3EMcCormick%20is%20generously%20offering%20our%20readers%20a%20giveaway%20including%20samples%20of%20
