Directions

  1. Cook the lentils in salted water until tender and strain. Cook the rice in salted water until tender and drain. Also cook the macaroni, rinse and strain.
  2. Place lentils, rice and macaroni in a cooking pot. Fry onions in the oil until browned, then drain the onions on absorbent paper towel and strain the oil into the lentil mixture. Return to the cooking surface and cook for 7-10 minutes, stirring frequently to prevent sticking and burning.
  3. Place mixture on each plate and top with tomato sauce, onions and sprinkle with hot chili powder or sauce if desired.
  4. Variation: Omit macaroni and double the amount of rice.
  5. Variation: Combine lentil mixture, sauce and onions in pot, heat and serve on plates.

    This is great comfort food. Think of it like a healthier and more flavorful version of mashed potatoes, and you will not be disappointed. I made a few substitutions. I used green lentils instead of brown. I used 1 cup of brown basmati rice and 1/4 cup of wild rice, so my dish had more lentils than rice. I diced and browned just one large onion..but the onions were awesome so you might want to stick with two. I tried it with and without the tomato sauce. It's great both ways, but I ended up liking it best with just a small dollop of tomato sauce. Finally, when the lentils were fairly soft, I just put the rice and an extra cup of water into the pot and let the rice cook until done. It was easy and worked perfectly. A tasty and easy dish!

      thx a lot nancy..i like ur recipes so much as well ..especially the basmati rice with hrebs and the Irish chocolat cake and i'll try them soon .. by the way we'r using basmati
      rice a lot in middle east but in egypt we've also a special excellent rice ( egyptian rice )
      and it's the rice which we use it in KOshary plate

        Hi Nani, this looks absolutely delicious! I've been waiting for someone in Egypt to join and put on some traditional recipes. I cannot wait to try this and your manakeesh recipe too. Saving to my "try soon" folder and may even cook it tonight!
