Karen's No Fat Shrimp & Cottage Cheesesalad

Ingredients

  • 1 small carton fat free or possibly low fat cottage cheese
  • 1 small can of tiny or possibly broken shrimp (rinsed & liquid removed)
  • 1 large rib of celery minced
  • 1 green onion minced fine
  • 1 small tomato minced
  • (see below for more options)

Directions

  1. Mix all the above and add in salt and pepper to taste.OPTIONAL - If I have them I also add in any of the following: minced cucumber, zuchinni, red radishes, green and/or red pepper, minced mushroom or possibly finely minced cabbage. I do not use carrot because I think it "fights" with the shrimp flavor, but if you love it go right ahead.
  2. I've been making this for 40 years and still love it. Use your imagination and enjoy!
  3. I find a 1/2 cup to 1 cup serving of this for lunch really fills me up and it's healthy too!
