James Brown's Sweet Potato Pie Recipe

Ingredients

3 med sweet potatoes, Cooked 3/4 c. Butter 2 1/2 c. Sugar 1 tsp Cinnamon 1 Tbsp. Vanilla

1 tsp Nutmeg 3 x Large eggs 1 can evaporated lowfat milk (14oz) 2 x Frzn 9-inch pie shells

Directions

1. In one bowl, mash potatoes, add in butter and mix together. Add in sugar, cinnamon, vanilla and nutmeg. In another bowl, beat Large eggs and add in lowfat milk.
2. Pour Large eggs and lowfat milk over sweet potato mix and stir. Pour into pie shells and cook for 45 min at 400f.
