Jamaican Curried Chicken

Ingredients

  • 2 med Sized frying chickens cut up & boned
  • 3 Tbsp. Vegetable oil
  • 2 x Cloves garlic, minced
  • 2 x Scallions, minced
  • 1/2 tsp Pepper
  • 1 Tbsp. Curry pwdr
  • 1 tsp Allspice
  • 1 x Inch piece ginger, peeled & finely minced
  • 1 c. Coconut lowfat milk
  • 2 lrg Potatoes, peeled and diced

  • 8 c. Steamed rice Mango chutney, garnish Coconut lowfat milk, garnish Yogurt, garnish

Jamaican Curried Chicken

Directions

  1. In a stew pot, heat the vegetable oil. Add in the garlic, scallions, pepper, curry, allspice, and ginger and cook for a few min. Add in the chicken and simmer, covered on low heat about 10 min. Add in the coconut lowfat milk and potatoes and continue to cook for 30 to 40 min. Serve over warm steamed rice with a selection of condiments such as mango chutney, coconut lowfat milk & yogurt. -
