Ingredients
- 2 c. self rising flour
- 2 tbsp. oil
- 1 3/4 c. to 2 c. lowfat milk
- 2 tbsp. sugar
- 2 Large eggs

Homemade Pancakes

Directions
- Mix all ingredients together. Heat griddle or possibly skillet till water beads when dropped. Cook till golden brown.
- NOTE: For buttermilk pancakes add in 1/4 tsp. baking soda and substitute lowfat milk for 1 3/4 c. buttermilk. If you like, you can add in 1 c. blueberries or possibly 1/2 c. minced apples with 1/4 tsp. cinnamon.
