Ingredients

  • 2 1/2 c. Warm, cooked sweet potatoes, mashed
  • 2 x Large eggs
  • 3 Tbsp. Shortening
  • 1/2 c. Lowfat milk
  • 1 Tbsp. Flour
  • 2 c. Sugar
  • 2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/2 c. Butter
  • 1 c. Brown sugar

Directions

  1. Mix sweet potatoes with well-beaten Large eggs. Add in shortening and lowfat milk, mixing thoroughly after each addition. Stir together flour, sugar, baking pwdr, salt and nutmeg. Add in to first mix, beating well. Pour into 1-qt casserole lined with mix of brown sugar and butter. Bake at 350 for approximately 1 hour.
