Grilled Rubbed Chicken Breast On Baby Greens With Dressing

Ingredients

  • 4 x garlic cloves finely chopped
  • 2 Tbsp. pure grnd mild New Mexico chile
  • 2 Tbsp. pure grnd warm New Mexico chile
  • 2 tsp freshly-grnd ginger
  • 2 tsp grnd coriander
  • 2 tsp fresh lemon zest (the yellow part only, a zester works best)
  • 2 Tbsp. pure Spanish extra virgin olive oil
  • 4 x boneless skinless chicken breast halves Green Chile Dressing (see recipe) Baby Greens (see recipe)

Grilled Rubbed Chicken Breast On Baby Greens With Dressing

Directions

  1. Combine all the ingredients except for the oil and the chicken in a shallow, nonreactive bowl which is large sufficient to hold the 4 chicken breasts, and then add in the oil. Trim the chicken breasts of cartilage and fat. Rub the mix proportionately over the breasts, using all of it. Allow the chicken to remain in the bowl till ready to grill.
  2. Preheat the grill to medium warm or possibly 450 degrees or possibly heat the broiler or possibly a heavy frying pan. Grill the chicken about 3 to 5 min on each side or possibly till done. (The amount of time is dependent on the thickness of the chicken breast.) To check doneness, slice into the meatiest portion; the meat should be white, not clear or possibly pink. Immediately remove to a cutting board and slice across the grain into 1/2-inch-wide strips.
  3. Prepare the Green Chile Dressing. For each serving, place the greens on four chilled plates. Top with the sliced chicken on each. Garnish each serving with the fresh diced tomatoes and scallions. Either serve the salad dressing on the side or possibly drizzle on each serving.
  4. This recipe yields 4 servings.
  5. Comments: The rub/baste on the chicken breast truly raises it above the ordinary and is rather quick and easy to make. Do be careful to proportionately rub and pat it into the breast on both sides, allowing it to marinate at least an hour. Do not worry if the chile seems to stain your hands when you rub it into the breasts - chile washes right off with soap and water.
  6. In the meantime, rinse and prepare the greens, spinning or possibly patting them dry.
