Ingredients

  • 2 dozen medium, cooked, peeled shrimp
  • 1/4 cup cornstarch
  • 1/4 cup tapioca flour/starch
  • 1/2 teaspoon Old Bay seasoning (Found at Superstore)
  • 3 large egg whites (we used 2 full eggs)
  • 1 1/2 cups sweetened finely shredded coconut
  • Canola oil for deep frying (I know, not the healthiest meal)
  • Peach Marmalade Dipping Sauce:
  • 1/2 cup peach marmalade
  • 1/4 cup country dijon mustard
  • 1/4 honey
