Directions

  1. Take half your fruit, and create a purée using a food processor or blender. Set aside. Dice the remaining fruit.
  2. Flip the can of coconut milk over, and open from the bottom. Carefully pour out the liquid, saving the creamy remains.
  3. On high, whip the cream until reaches the soft peak stage. Add some sugar and vanilla to taste. Pour in the purée, just enough to flavour the whip.
  4. In a clear bowl or parfait glass, place some of the diced fruit.
  5. Add some of the whipped coconut milk.
  6. Continue layering fruit and coconut milk.
  7. Garnish with your choice of topping.
  8. Refrigerate until ready to serve

    When I made this recipe, I used strawberries. My husband and I both agreed that using pineapple or bananas would have complimented the coconut better, and if using bananas chocolate would have made a great addition (you can also purchase dairy-free chocolate if that is what you are going for).
