%3C/p%3E%3Cp%3E...Dinner?%3C/p%3E%3Cp%3EI%20keep%20hearing%20insinuations%20that%20Keith%20and%20I%20put%20massive%20effort%20into%20our%20food%20all%20the%20time,%20that%20we%20eat%20huge%20fancy%20meals%20every%20day.%20I%20thought%20I'd%20set%20the%20record%20straight%20here!%20We%20do%20eat%20good,%20home-cooked%20food%20for%20the%20most%20part%20(though%20I%20have%20to%20confess%20a%20weakness%20for%20Annie's%20Mac%20&%20Cheese%20and%20Pizza%20Roma).%20But%20it's%20usually%20not%20fancy.%20You%20just%20hear%20about%20it%20when%20it%20is,%20because%20I'm%20proud%20of%20a%20special%20occasion.%3C/p%3E%3Cp%3ETonight%20was%20a%20far%20more%20typical%20night.%20We%20had%20blackeye%20peas%20and%20cornbread%20for%20dinner.%20Sounds%20homely,%20but%20it%20was%20delicious,%20healthy,%20and%20hearty.%20The%20trick%20to%20a%20simple%20frugal%20meal%20is%20to%20do%20it%20right%20from%20scratch;%20it%20takes%20maybe%20an%20hour%20of%20mostly%20passive%20time%20to%20cook,%20which%20admittedly%20is%20longer%20than%20microwaving%20something,%20but%20it's%20worth%20it.%20These%20blackeye%20peas%20were%20pretty%20simple,%20just%20simmered%20in%20broth%20with%20balsamic%20vinegar%20and%20pepper%20flakes%20and%20then%20topped%20with%20a%20little%20bit%20of%20grated%20cheddar%20cheese.%20The%20cornbread...%20well,%20I'm%20feeling%20generous,%20so%20I'll%20share%20a%20cornbread%20recipe%20that%20took%20me%20years%20to%20perfect.%20Enjoy%20this%20cornbread%20-%20it's%20never%20once%20let%20me%20down.%3C/p%3E%3Cp%3ENote:%20If%20you%20have%20a%20cast-iron%20skillet,%20put%20the%20oil%20in%20it%20and%20stick%20it%20in%20the%20oven%20to%20preheat%20right%20along%20with%20the%20oven.%20If%20you're%20making%20this%20in%20a%20regular%20pan,%20then%20omit%20the%20oil%20and%20understand%20that%20the%20cornbread%20won't%20have%20that%20nice%20crispy%20crust%20on%20the%20bottom.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20(and%20oiled%20skillet)%20to%20425%20F.%3C/p%3E%3Cp%3EMix%20the%20dry%20ingredients%20together%20in%20a%20large%20bowl%20with%20a%20fork%20or%20whisk.%20In%20a%20separate%20bowl,%20mix%20together%20the%20wet%20ingredients%20(I%20usually%20just%20mix%20them%20all%20right%20there%20in%20the%20measuring%20cup),%20beating%20the%20egg%20into%20the%20honey%20and%20milk.%20Pour%20the%20wet%20ingredients%20into%20the%20dry,%20and%20give%20it%20all%20a%20quick%20stir%20just%20to%20moisten%20it.%20Don't%20overmix!%20Some%20lumps%20are%20okay.%20Pour%20it%20all%20into%20the%20preheated%20skillet%20and%20bake%20it%20for%20half%20an%20hour%20or%20until%20a%20knife%20inserted%20in%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ESee?%20Not%20fancy,%20not%20hard,%20just%20quick%20and%20delicious%20and%20dirt-cheap.%20You%20can't%20get%20better%20than%20that.%3C/p%3E%3Cp%3EUPDATE%203/18/11:%20Some%20friends%20of%20mine%20have%20gone%20gluten-free%20and%20I%20tried%20making%20this%20recipe%20with%20brown%20rice%20flour%20instead%20of%20wheat.%20Since%20the%20cornmeal%20dominates,%20the%20wheat%20isn't%20necessary,%20and%20I've%20repeatedly%20found%20that%20it's%20actually%20better%20with%20rice%20flour.%20So%20if%20you're%20not%20into%20the%20gluten%20thing,%20no%20worries,%20and%20if%20you%20normally%20eat%20wheat,%20try%20something%20different%20and%20enjoy%20the%20surprise!%3C/p%3E){kind=link}
