%20and%20turned%20the%20pile%20religiously.%20I%20was%20so%20proactive%20that%20by%20the%20time%20I%20left%20for%20school%20in%20the%20fall,%20there%20were%20actually%20a%20few%20inches%20of%20rich,%20new,%20friable%20dirt%20at%20the%20bottom%20of%20the%20heap.%20It%20was%20pretty%20thrilling.%3C/p%3E%3Cp%3EAlthough%20I%20suffered%20some%20heartbreaking%20losses%20in%20the%20garden%20that%20summer%20(namely,%20almost%20all%20of%20my%20tomatoes),%20I%20also%20had%20some%20triumphs%20including%20two%20small%20eggplants,%20okra,%20and%20lots%20of%20gorgeous%20lettuces.%20But%20my%20favorite%20plants%20were%20the%20cucumbers.%20I%20had%20never%20grown%20them%20before%20and%20was%20completely%20awed%20by%20their%20cleverness.%20The%20vines%20climb%20by%20sending%20out%20straight,%20thin,%20green%20tendrils%20which%20reach%20in%20all%20directions%20until%20they%20find%20something%20(in%20my%20case,%20the%20deer%20fence%20my%20dad%20had%20built%20around%20my%20little%20raised%20bed%20garden)%20to%20grab%20onto.%3C/p%3E%3Cp%3EThen%20the%20tendril%20wraps%20itself%20around%20that%20thing%20and%20coils%20the%20rest%20of%20itself%20into%20a%20little%20green%20spring,%20pulling%20the%20rest%20of%20the%20plant%20up%20as%20it%20coils.%20Then%20it%20begins%20the%20process%20all%20over%20again.%20This%20struck%20me%20as%20nothing%20short%20of%20spectacular.By%20climbing%20the%20fence,%20the%20plant%20keeps%20the%20cucumbers%20off%20the%20ground%20where%20they%20can%20grow%20in%20relative%20safety%20--%20free%20from%20the%20unwanted%20advances%20of%20slugs%20and%20mold,%20etc.%20And%20grow%20they%20did.%20There%20may%20not%20be%20anything%20quite%20as%20satisfying%20as%20biting%20into%20a%20crunchy%20cucumber%20fresh%20off%20the%20vine%20from%20your%20own%20garden.But%20even%20if%20you%20don't%20have%20a%20garden,%20there%20are%20tons%20of%20delicious%20cukes%20out%20there%20right%20now%20for%20the%20taking%20at%20farmers%20markets%20and%20farm%20stands.%20And%20while%20there%20are%20lots%20of%20yummy%20ways%20to%20eat%20cucumbers,%20including%20tzatziki,%20raita,%20and%20chopped%20salad,%20I%20want%20to%20talk%20about%20pickles.Although%20you%20can%20make%20delicious%20pickles%20to%20see%20you%20through%20the%20winter%20if%20you%20want%20to%20bust%20out%20your%20canning%20equipment,%20there%20is%20an%20easy%20way%20to%20make%20equally%20tasty%20pickles%20with%20a%20minimum%20of%20time%20and%20effort%20and%20without%20having%20to%20turn%20on%20your%20stove.%20While%20refrigerator%20pickles%20don't%20have%20the%20shelf%20life%20of%20canned%20pickles%20they're%20so%20good%20that%20they%20probably%20won't%20last%20long%20enough%20for%20that%20to%20be%20a%20problem.%3C/p%3E%3Cp%3ERefrigerator%20Pickles%3C/p%3E%3Cp%3EMakes%20a%201-Quart%20Jar%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E(*%20These%20spices%20are%20just%20suggestions%20--%20you%20can%20skip%20any%20or%20all%20of%20them%20without%20any%20real%20problem,%20or%20substitute%20other%20spices%20you%20think%20might%20work%20well)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Place%20the%20garlic%20cloves%20in%20the%20bottom%20of%20the%20jar,%20then%20pack%20it%20with%20the%20cucumber%20spears%20and%20dill%20sprigs.%3C/p%3E%3Cp%3E2.%20Combine%20the%20other%20ingredients%20and%20pour%20the%20liquid%20over%20the%20cucumbers%20until%20they're%20fully%20covered.%20Close%20the%20jar%20and%20refrigerate.%20It%20may%20take%20up%20to%20a%20day%20for%20them%20to%20begin%20to%20taste%20pickled.%20They%20should%20last%20in%20the%20fridge%20for%20a%20few%20weeks%20though%20they'll%20begin%20to%20lose%20their%20crunchiness%20at%20some%20point.%3C/p%3E%3Cp%3EA%20few%20other%20recipes%20you%20might%20like:%3C/p%3E){kind=link}
