Curried Prawn And Pasta Salad

Ingredients

  • 1 lb Medium prawns -- peeled & Deveined
  • 2/3 c. White wine
  • 2 c. Rotelle pasta
  • 1/4 tsp Pepper
  • 1/2 c. Chopped celery
  • 1/2 c. Low-calorie mayonnaise
  • 1 tsp Lemon juice
  • 2 tsp Curry pwdr Lettuce leaves -- for Decoration
  • 1 Tbsp. Minced, toasted almonds

Directions

  1. In a small saucepan over medium-high heat, place prawns and wine, and cook till prawns turn pink (about 2 min). Remove prawns and cut in half. Throw away wine.
  2. Cook pasta till al dente (about 8 min). Drain and refresh under cool water. In a large bowl mix pasta with cooked prawns, pepper, celery, mayonnaise, lemon juice, and curry pwdr. Refrigerate20 min. Arrange on a bed of lettuce and garnish with almonds.
