%20going%20around%20on%20Facebook%20or%20Pinterest%20(I'm%20not%20sure%20exactly%20which),%20and%20it%20looked%20easy%20and%20tasty.%20%20I%20had%20never%20actually%20looked%20at%20the%20recipe%20until%20I%20went%20searching%20on%20Pinterest%20today.%20%20Why%20not,%20right?%3C/p%3E%3Cp%3EThere%20are%20quite%20a%20few%20variations%20of%20this%20recipe%20out%20there,%20some%20of%20them%20are%20baked%20in%20the%20oven%20and%20some%20are%20for%20the%20crock%20pot.%20%20The%20yard%20really%20needed%20mowed%20this%20afternoon%20because%3C/p%3E%3Cp%3Eit%20has%20been%20raining%20so%20much%20and%20the%20grass%20has%20been%20growing%20and%20growing%20-%3C/p%3E%3Cp%3Eand%20today%20was%20the%20only%20day%20all%20week%20that%20didn't%20call%20for%20more%20rain.%20%20The%20grass%20probably%20would%20have%20been%20knee%20high%3C/p%3E%3Cp%3Eby%20the%20next%20time%20I%20could%20have%20gotten%20to%20it.%20%20%20So%20I%20needed%20something%20I%3C/p%3E%3Cp%3Ecould%20throw%20into%20the%20crock%20pot%20in%20the%20morning%20and%20be%20able%20to%20have%20dinner%3C/p%3E%3Cp%3Etonight.%3C/p%3E%3Cp%3EI%20really%20liked%20that%20this%20recipe%20uses%20a%20fresh%20homemade%20sauce%20to%20cook%20the%3C/p%3E%3Cp%3Echicken%20and%20vegetables.%20%20But%20don't%20let%20that%20scare%20you%20away,%20because%20it's%3C/p%3E%3Cp%3Ereally%20simple%20-%20olive%20oil,%20lemon%20juice,%20and%20some%20seasonings.%20%20Yum!%20%20Put%20the%20chicken%20and%20vegetables%20into%20the%20crock%20pot,%20pour%20the%20sauce%20over%20the%20top,%20and%20come%20back%20at%20dinner%20time%20for%20a%20delicious%20meal.%3C/p%3E%3Cp%3ECrock%20Pot%20Chicken%20w/%20Potatoes%20and%20Green%20Beans%3C/p%3E%3Cp%3Eadapted%20from%20The%20Magical%20Slow%20Cooker%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%201%20cup%20glass%20measuring%20cup%20(or%20small%20bowl),%20mix%20olive%20oil,%20lemon%20juice,%20oregano,%20salt,%20pepper,%20and%20garlic%20with%20whisk.%3C/p%3E%3Cp%3EPut%20sliced%20onion%20on%20bottom%20of%205%20to%206%20quart%20crock%20pot.%20%20Put%20chicken%20in%20the%20middle%20with%20potatoes%20and%20green%20beans%20on%20either%20side.%20%20Pour%20seasoning%20mixture%20evenly%20over%20the%20top.%3C/p%3E%3Cp%3ECover%20and%20cook%20on%20Low%20for%207%20to%208%20hours%20(or%20High%20for%204%20hours).%3C/p%3E%3Cp%3EShortly%20before%20serving,%20slice%20chicken%20breasts%20and%20allow%20to%20sit%20in%20the%20broth%20for%20a%20few%20minutes.%20%20Enjoy.%3C/p%3E%3Cp%3EI%20didn't%20really%20change%20a%20lot%20from%20the%20original%20recipe.%20%20I%20threw%20some%20sliced%20onion%20in%20the%20bottom%20of%20the%20crock%20pot,%20and%20I%20used%20frozen%20green%20beans%20because%20I%20didn't%20have%20any%20fresh%20ones.%20%20The%20chicken%20breasts%20were%20also%20still%20pretty%20much%20frozen%20when%20I%20put%20them%20into%20the%20crock%20pot.%3C/p%3E%3Cp%3EI%20used%20a%20bit%20more%20lemon%20juice%20than%20the%20recipe%20called%20for.%20%20The%20juice%20from%20one%20lemon%20wasn't%20quite%20enough,%20so%20I%20squeezed%20another%20one%20and%20that%20was%20too%20much.%20%20I%20really%20should%20have%20checked%20after%20squeezing%20the%20first%20half%20of%20that%20second%20lemon.%20%20But%20I%20didn't%20think%20about%20that%20until%20after%20I'd%20squeezed%20the%20second%20half.%20%20It%20turned%20out%20really%20good,%20extra%20lemon%20juice%20or%20not.%20%20Just%20be%20sure%20to%20use%20fresh%20lemon%20juice%20and%20not%20the%20stuff%20that%20comes%20from%20a%20bottle.%3C/p%3E%3Cp%3EFun%20fact:%20if%20you%20measure%20the%20olive%20oil%20into%20the%20measuring%20cup%20and%20then%20squeeze%20the%20lemon%20juice%20on%20top,%20the%20lemon%20juice%20will%20go%20to%20the%20bottom,%20allowing%20you%20to%20measure%20it,%20too.%20%20Did%20that%20make%20sense?%20%20I%20really%20should%20have%20taken%20a%20picture,%20but%20I%20didn't%20think%20about%20it.%20%20Maybe%20next%20time.%3C/p%3E%3Cp%3EI%20really%20love%20how%20simple%20and%20flavorful%20this%20is.%20%20It's%20definitely%20my%20kind%20of%20recipe.%3C/p%3E){kind=link}
