Cowboy Caviar Recipe

Ingredients
- 1 15 oz. can yellow corn, drained
- Main Cowboy Caviar:
- 1 15 oz. can blackeyed peas, drained
- 2/3 C chopped cilantro
- 2/3 C chopped green onions
- 1/2 C chopped tomatoes
- 1-2 cubed avocados
- Combine all ingredients in a bowl
- Dressing:
- 1/4 C olive oil
- 1/4 C red wine vinegar
- 2 garlic cloves, minced
- 3/4 t salt
- 1/8 t pepper
- 1 t cumin
Directions
- Combine all ingredients from Cowboy Caviar in a bowl.
- Mix ingredients well from dressing in a seperate bowl. Pour over caviar. Serve with Scoops tortilla chips.
