%3C/p%3E%3Cp%3EIt's%20very%20calming%20and%20quiet%20inside.%20We%20always%20start%20off%20with%20the%20Chrysanthemum%20tea.%20It's%20one%20or%20two%20large%20Chrysanthemum%20flowers%20(just%20the%20heads)%20which%20are%20steeped%20in%20hot%20water%20to%20produce%20a%20mild%20flavored%20tea.%20You%20even%20see%20the%20flower%20petals%20on%20the%20bottom%20of%20the%20mug%20which%20are%20delicious%20as%20well.%20Next%20up%20is%20the%20%22Fresh%20Signature%20Salad.%22%20Kind%20of%20mysterious,%20right?%20Let%20me%20tell%20you,%20it%20is%20the%20most%20delicious%20salad%20you'll%20ever%20have.%20Its%20a%20heaping%20pile%20of%20shredded%20crunchy%20fruits%20(Jacima,%20Mango,%20papaya,%20and%20apple)%20served%20with%20a%20fish%20vinaigrette%20sauce,%20which%20you%20will%20want%20to%20drink%20all%20on%20its%20own.%20Topped%20with%20crushed%20peanuts%20and%20crispy%20fried%20scallions.%20While%20my%20sister%20has%20tried%20the%20Pho,%20curry%20chicken,%20and%20several%20other%20dishes%20on%20the%20menu,%20I%20have%20only%20tried%20the%20flounder.%20I%20can't%20get%20passed%20it!%3C/p%3E%3Cp%3EThis%20is%20a%20dish%20I%20made%20up%20with%20all%20the%20ingredients%20I%20got%20at%20the%20asian%20farmers%20market.%20I%20explored%20every%20aisle%20up%20and%20down,%20every%20bottle,%20can%20and%20package.%20I%20came%20home%20with%20fish%20sauce%20(more%20on%20this%20later)%20soba%20noodles%20and%20thai%20basil%20(I%20prefer%20this%20over%20regular%20basil).%20The%20soba%20noodles%20were%20actually%20precooked,%20I%20really%20liked%20the%20nutty%20flavor%20but%20the%20texture%20was%20slightly%20off%20so%20next%20time%20I%20will%20probably%20buy%20dried%20soba%20and%20boil%20them%20myself.%20I%20also%20found%20%22vegetable%20pasta%22%20thats%20made%20with%20spinach,%20broccoli%20and%20celery%20which%20was%20homemade,%20you%20can%20even%20see%20the%20residual%20flour%20that%20was%20used%20on%20the%20noodles.%20I%20started%20by%20taking%20some%20thai%20basil%20leaves%20and%20steeping%20them%20in%20light%20coconut%20milk%20(Trader%20Joe's%20is%20the%20only%20place%20I%20know%20that%20carries%20light).%20I%20also%20threw%20in%20some%20minced%20garlic%20and%20a%20splash%20of%20lime%20and%20let%20the%20flavors%20marry.%20Then%20comes%20the%20spinach%20leaves%20which%20wilt%20down%20and%20become%20tender.%20This%20is%20my%20base%20for%20my%20creamy%20pasta%20sauce.%20Then%20comes%20the%20crunchy%20topping%20of%20shredded%20coconut%20and%20almond%20slices.%20Don't%20use%20sweetened%20shredded%20coconut,%20instead%20use%20unsweetened%20thick%20shreds%20which%20are%20healthy%20and%20pretty%20too,%20from%20Whole%20Foods.%20Combine%20the%20coconut/spinach%20mixture%20with%20the%20soba%20noodles%20and%20top%20with%20the%20crunch.%20I%20licked%20the%20plate.%3C/p%3E%3Cp%3EGrated%20parmesan%3C/p%3E%3Cp%3E1%20Heat%20coconut%20milk%20in%20saucepan%20until%20steamy%20with%20thai%20basil%20leaves,%20garlic%20and%20lime%20juice.%3C/p%3E%3Cp%3E2%20Place%20spinach%20inside%20milk%20and%20stir%20occasionally%20until%20wilted%20and%20soft.%20Salt%20to%20taste.%3C/p%3E%3Cp%3E3%20Meanwhile%20toast%20the%20almonds%20and%20coconut%20in%20a%20dry%20pan%20until%20fragrant%3C/p%3E%3Cp%3E4%20Combine%20the%20milk%20mixture%20with%20the%20noodles%20and%20toss%20until%20evenly%20combined.%20Top%20with%20crunchy%20topping%20and%20grated%20parmesan%20cheese.%3C/p%3E){kind=link}
