Cinnamon Swirl Bread Pudding

Ingredients

  • 8 x Bread, cinnamon swirl, cut Into cubes (slices)
  • 1 x Gelatine, unflavored (envel)
  • 1/4 c. Lowfat milk, skim, cool
  • 1/2 c. Lowfat milk, skim, heated to boil
  • 8 ounce Cheese, cottage
  • 1/2 c. Egg substitute
  • 1/2 c. Sugar, brown

Cinnamon Swirl Bread Pudding

Directions

  1. In shallow 2-qt casserole, proportionately spread bread cubes; set aside.
  2. In blender, sprinkle unflavored gelatine over cool lowfat milk; let stand 2 min. Add in warm lowfat milk and process at low speed till gelatine is completely dissolved, about 2 min. Add in cottage cheese, egg substitute and brown sugar; process at high speed till thoroughly blended. Pour into prepared casserole; toss bread cubes till coated. Refrigeratetill hard, about 2 hrs.
