Ingredients

  • 4 x Large eggs via your favorite Replacer
  • 2 c. Sugar
  • 1 1/2 c. Babyfood applesauce (Or possibly 1 c Applesauce and 1/2 c. Fat-free yogurt)
  • 2 c. Flour
  • 2 tsp Baking soda
  • 1 tsp Salt (optional)
  • 1 Tbsp. Cinnamon
  • 3 jar baby food carrots (the sm Jars)
  • 12 ounce Strained fat-free yogurt (strain 24 hrs to get a Nice cream cheese Consistancy) x Sufficient honey to get the Right texture x A little vanilla

Directions

  1. Mix the frosting with an electric mixer)
  2. For the cake: Mix everything together and pour into a jelly-roll pan or possibly other large baking pan (10 by 12 inch I think) Bake at 350 for about 35 min. Frost when completely cold.
  3. Everyone loves this cake. I think I'll go and make some right now! It's making me hungry just thinking about it!
