Carroll Shelby's Gourmet Chili

Ingredients

  • 1 1/2 lb Lean Beef -- * see note
  • 1/2 lb Lean Pork -- * see note
  • 1 c. Onions -- minced
  • 1 lrg Garlic Clove -- finely Minced
  • 2 Tbsp. Bacon Drippings -- --or possibly -- Lard
  • 1 lrg Green Bell Pepper -- ** see Note
  • 15 ounce Tomato Sauce
  • 12 ounce Beer -- preferably mexican
  • 1 pkt Original Texas Chili Preparation
  • 4 ounce Green Chiles -- diced

Directions

  1. * Or possibly substitute 2 lbs. fresh vension for beef/pork, if you like.** or possibly substitute 1/2 green and 1/2 red bell pepper.
  2. Cut or possibly grind meat into small pcs coarser than regular grnd meat. Lb. with meat mallet. Combine with onion and garlic and add in to heavy, large pot or possibly Dutch oven with lard or possibly bacon drippings. Cook over medium-high heat till meat is browned and onions is tender, about 6 min. Stir occasionally to keep meat proportionately browned. Add in bell pepper, tomato sauce and beer. Simmer, uncovered, for 30 min. Add in remaining ingredients except packet of masa flour in Chili Preparation package. Simmer 1 hour more, stirring occasionally. If more liquid is needed, add in beer as desired. Mix masa flour with a little beer to make a thin paste. Stir masa mix into chili. Simmer another 30 min. Check for taste and add in cayenne pepper packet from Chili Preparation, if you dare.
  3. Serves 4 to 6.
