Ingredients

  • 1 1/2 lb fresh broccoli
  • 2 x green onions -- minced
  • 4 ounce pimiento -- diced, liquid removed
  • 1/2 c. raisins
  • 1/2 c. peanuts, dry-roasted
  • 1/2 c. mayonnaise
  • 2 Tbsp. honey

Directions

  1. Trim off large leaves of broccoli and remove tough ends of lower stalks; wash broccoli thoroughly. Cut stalks into 1/4 inch slices. Cut remaining broccoli into flowerets; place in a large bowl. Add in green onion, pimiento, raisins, and peanuts. Combine mayonnaise and honey in a small bowl; spoon dressing mix over top of broccoli mix. Toss gently to coat. Cover and refrigerate2 hrs.
  2. Yield: 6 servings.
