Ingredients

  • 1/2 c. extra virgin olive oil
  • 1/4 c. Dijon mustard
  • 1/4 c. balsamic vinegar
  • 1 x garlic clove pressed
  • 1/2 pkt sugar substitute
  • 1/2 tsp dry basil
  • 1/4 tsp freshly-grnd black pepper
  • 1 1/2 lb beef tenderloin tips
  • 1 Tbsp. extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 8 ounce mixed salad greens (8 to 10) Atkins Croutons for serving

Directions

  1. Make Dijon dressing: Whisk together extra virgin olive oil, mustard, vinegar, garlic, sugar substitute, basil and pepper in a medium bowl till creamy. Set aside.
  2. Cut beef tips into 1- by 1/2-inch pcs. Heat oil in a large nonstick skillet over medium-high heat till warm. Brown beef in two batches 2 to 3 min. Remove from skillet and season with salt and pepper.
  3. Toss salad greens with 1/2 c. dressing in a large bowl. Arrange greens on a platter; top with beef and croutons. Serve with remaining dressing on the side.
  4. This recipe yields 4 servings.
