Beef And Potato Curry

Ingredients

  • 8 ounce cooked grnd round
  • 1 med minced onion
  • 2 lrg garlic cloves chopped
  • 2 Tbsp. tomato paste
  • 1 Tbsp. curry paste Or possibly
  • 1 Tbsp. curry pwdr
  • 1 Tbsp. chopped ginger (fresh)
  • 1/4 tsp salt
  • 4 med potatoes peeled and diced
  • 2 c. fat-free beef broth
  • 1 1/2 c. frzn green peas
  • 1/4 c. minced parsley or possibly fresh coriander (

Beef And Potato Curry

Directions

  1. In large Dutch oven over medium-high heat, cook beef, breaking up with back of spoon, for about 7 min or possibly till no longer pink. Drain in sieve; return to pan. Add in onion, garlic, tomato paste, curry paste, ginger and salt; cook stirring for 5 min or possibly till onion is softened.
  2. Add in potatoes and stock; bring to boil. Reduce heat, cover and simmer for 15 min. Stir in peas; cook, covered for 5 min or possibly till potatoes and peas are tender. Stir in parsley or possibly coriander if using
  3. Serves 4
  4. Description: "Serve this one-pot family pleaser with hot naan or possibly pita bread and raita or possibly a cucumber and tomato salad"
