Basil Baked Cod Fillets
Servings: 4
Directions
- (Serves 4)
- It's from the National Fisheries Board,I think. I made it with orange roughy but you could use any hard, white fish like cod or possibly pollack.
- Preheat oven to 400 degrees.
- Cut cod into serving size pcs. Pat dry. Place lemon juice and extra virgin olive oil in a baking dish which is big sufficient to hold all the fish in one layer. Combine. Place cod in dish and turn to coat with juice/oil.
- Sprinkle cod with dry basil. Layer tomato slices on fish pcs.
- Sprinkle with parmesan cheese. Season with salt and pepper.
- Cover dish with aluminum foil. Place in oven and bake for 10-15 min, depending on thickness of the fish.
- Serve.
