Basic Pasta Dough (Pasta All' Uovo)

  • 1 lb all-purpose flour
  • 2 lrg Large eggs
  • 8 lrg egg yolks
  • 1 tsp salt
  • 1 Tbsp. extra-virgin extra virgin olive oil

Basic Pasta Dough (Pasta All' Uovo)

Directions

  1. In the bowl of a food processor, combine the flour and salt. Process to mix well. With the machine running, add in the Large eggs, egg yolks, salt, and extra virgin olive oil through the feed tube, and process till it resembles wet cornmeal, about 2 min.
  2. Take a handful of dough at a time and form into a hard ball. Repeat with the remaining dough. Roll out each dough ball into desired shape in a pasta machine according to the manufacturer's instructions.
  3. Bring a pot of salted water to the boil and cook the pasta till just al dente, about 2 min. Drain in a colander and serve with desired sauce.
  4. This recipe yields about 1 3/4 pounds fresh pasta.
  5. Yield: 1 3/4 pounds
