Baked Stuffed Flounder

Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 1/2 c. Finely diced onion
  • 1 x Clove garlic, chopped
  • 1/4 c. Chopped celery
  • 1/4 c. Chopped carrot
  • 1/4 c. Chopped red pepper
  • 1/4 tsp Salt, pepper, thyme
  • 4 lrg Flounder fillets
  • 1 Tbsp. Grated parmesan
  • 1 Tbsp. Mayonnaise
  • 1/2 tsp Dijon mustard
  • 1 Tbsp. White wine

Baked Stuffed Flounder

Directions

  1. In medium skillet, heat oil and saute/fry' onion, garlic, celery, carrot, and pepper 5-7 min. Sprinkle with salt, pepper, and thyme. Spoon equal amounts on each fillet. Roll fish to enclose stuffing. Lay seam side down in shallow baking dish. In small bowl, whisk together parmesan, mayonnaise, mustard and wine. Spread over fillets. Bake 20 min at 400 degrees.
