Baked Rice Custard

Ingredients

  • 1/2 c. rice, short-grain
  • 3 c. water
  • 1 pch salt
  • 3 x Large eggs
  • 1/3 c. sugar (caster)
  • 1 tsp vanilla essence
  • 2 1/2 c. lowfat milk
  • 1/3 c. saltanas

Baked Rice Custard

Servings: 4
 

Directions

  1. Bring water and salt to the boil. Gradually add in rice. Boil rapidly uncovered 10 min; drain well.
  2. Beat lowfat milk, Large eggs, sugar and vanilla together, add in rice and saltanas.
  3. Pour into ovenproof dish. Stand in baking dish with sufficient water to come half way up the sides of dish. Bake in moderate oven (350F) for 50 min or possibly till mix is set.
  4. Serve warm or possibly cool.
  5. Serve warm or possibly cool with cream and poached or possibly fresh fruits.
