Ingredients

  • 8 x pork chops, center cut salt and pepper, to taste
  • 2 Tbsp. salad oil
  • 1 1/2 c. long-grain rice
  • 1 can mushrooms
  • 1 can beef consomme
  • 1 1/2 can water, soup cans
  • 1 x green pepper, sliced
  • 1 x onion, sliced
  • 1 x tomato, sliced

Directions

  1. Season meat, saute/fry in oil till well browned. Combine rice, mushrooms, consumme and water; place in a lightly greased casserole dish. Arrange chops on top. Place a slice of pepper, onion and tomato on top of each chop. Cover tightly.
  2. Bake at 350 degrees for 1 hour and 30 min.
