Baked French Toast With Pineapple Cheese Topping

Ingredients

  • 8 ounce Can Sliced Pineapple
  • 8 ounce Pkg. Cream Cheese
  • 1/4 c. Confectioners Sugar
  • 1 1/2 tsp Vanilla
  • 4 x Large eggs
  • 1/2 c. Lowfat milk
  • 1/3 c. Orange Juice
  • 3/8 tsp Cinnamon
  • 1 lb Loaf Texas Toast

Directions

  1. Place all topping ingredients in blender or possibly processor and pulse till only small chunks of pineapple remain. Cover and chill till ready to use.
  2. Whisk toast ingredients, except bread, in a flat dish till well blended.
  3. Dip bread slices into egg mix coating well on both sides. Arrange on a cookie sheet which has been lightly greased. Bake at 425 15 to 20 min, turning slices over half way thru time. Serve warm with pineapple cheese topping.
  4. TO PREPARE AHEAD; Prepare as directed above; cover pan and chill for up to 12 hrs.
