Asian Pork Lettuce Wrap

I had several thick slices of Pork Roast Tenderloin leftover and made these for lunch, they were a hit!

Ingredients

  • 3 slices Thick Roasted Pork Tenderloin
  • one teaspoon grated fresh ginger root
  • one carrot
  • 1/4 onion diced finely
  • 3 tablespoons low sodium Soy sauce
  • 2 Tablespoons Creamy Peanut Butter
  • 2 tablespoon dry roasted peanuts chopped (garnish)
  • 4 Bibb Lettuce (cups)

Directions

  1. Dice Pork Slices and place into a saute pan, add ginger, soy sauce on low heat, stir, add creamy peanut butter and stir well to combine, add shredded carrot, onion and saute 4 minutes.
  2. Spoon in pork mixture in lettuce cup, add peanuts and serve.
