,%20we%20had%20gorgeous,%20freshly%20dug%20potatoes%20from%20last%20week%E2%80%99s%20CSA%20box%20that%20needed%20to%20be%20used%20since%20they%20don%E2%80%99t%20keep%20as%20well%20as%20cured%20ones%20(and%20I%20assumed%20we%E2%80%99d%20get%20more%20in%20today%E2%80%99s%20box).%20Craig%20has%20never%20been%20a%20mayo-based,%20egged%20potato%20salad%20fan%20but%20has%20come%20to%20really%20enjoy%20German%20style,%20made%20with%20vinegar,%20sugar,%20and%20bacon.%3C/p%3E%3Cp%3EThis%20recipe%20originally%20came%20from%20Alanna%20at%20A%20Veggie%20Venture,%20and%20I%E2%80%99ve%20made%20a%20number%20of%20small%20changes.%20We%20love%20the%20tang%20the%20vinegar%20imparts%20and%20the%20onions%20and%20celery%20add%20a%20bit%20of%20crunch.%20Beer%20screams%20to%20be%20the%20liquid%20of%20choice%20in%20the%20sauce.%20But%20adding%20blue%20cheese,%20which%20always%20makes%20things%20taste%20better,%20likely%20disqualifies%20this%20as%20German%20potato%20salad.%20If%20you%20cook%20the%20potatoes%20in%20advance,%20it%20comes%20together%20in%20about%2015%20minutes.%20Without%20mayo,%20it%20withstands%20the%20heat%20of%20a%20St.%20Louis%20summer%20and%20is%20perfect%20for%20picnics%20or%20BBQs.%20Definitely%20add%20a%20few%20slices%20of%20bacon,%20but%20I%20didn%E2%80%99t%20have%20any%20defrosted.%20Any%20leftovers%20are%20awesome%20heated%20in%20a%20skillet%20and%20topped%20with%20fried%20eggs.%3C/p%3E%3Cp%3EWarm%20Sorta%20German%20Potato%20Salad%3C/p%3E%3Cp%3EServes%208%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20melt%20the%20bacon%20grease%20on%20medium%20high%20until%20shimmery.%20Add%20the%20onion%20and%20stir%20to%20coat%20with%20fat.%20Cook%20until%20the%20onions%20are%20starting%20to%20soften%20and%20add%20the%20celery.%20Cook%20until%20the%20veggies%20are%20just%20beginning%20to%20brown,%20stirring%20often.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20small%20bowl,%20stir%20together%20the%20flour,%20sugar,%20celery%20seed%20and%20mustard.%20A%20tablespoon%20at%20a%20time,%20stir%20in%20the%20vinegar,%20incorporating%20each%20tablespoon%20completely%20before%20adding%20the%20next%20tablespoon.%20This%20avoids%20lumps%20of%20flour%20in%20the%20sauce.%20Add%20this%20to%20the%20cooked%20vegetables%20and%20stir%20for%20a%20minute.%20It%20will%20get%20quite%20thick%20and%20will%20%E2%80%9Cseize%20up%E2%80%9D.%20Add%20the%20beer%20(or%20water%20or%20broth)%20a%20tablespoon%20at%20a%20time%20until%20a%20thin%20sauce%20consistency%20is%20reached.%20Gently%20toss%20in%20the%20potatoes%20and%20stir%20to%20coat.%20Let%20potatoes%20warm%20through.%20Taste%20and%20adjust%20seasonings.%20Serve%20warm.%3C/p%3E){kind=link}
