Zucchini Santa Fe

Ingredients

  • 3 Cups Zucchini, Sliced
  • 1/2 Cup Onion, Chopped
  • 1 Tbsp. Canola Oil
  • 4 Oz. Can Chopped Roasted Green Chilies, Drained
  • 1 Medium Tomato, Chopped
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Ground Black Pepper
  • 1/4 Tsp. Garlic Powder
  • 1/2 Cup Cheddar or Monterey Jack Cheese, Shredded

Zucchini Santa Fe

Time: 10 minutes prep, 15 minutes cook
Servings: 6
 

Directions

  1. In a large skillet, sauté the zucchini and onion in oil for 3-4 minutes or until crisp-tender. Add the chilies, tomato, salt if desired, pepper and garlic powder. Cook and stir for 3-4 minutes. Spoon into a serving bowl and sprinkle with cheese.
