Ingredients

  • 1 1/2 c.Grated Zucchini
  • 2/3 c Sugar or 1/3c Stevia and 1/3 c Brown sugar
  • 1/4 c Almond milk/milk
  • 1 Eggs
  • 1/4 c Oil
  • 1/4 c Honey
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1/2 tsp Clove
  • 3/4 tsp Baking soda
  • 1/2 tsp Soda
  • 1/8 tsp Salt
  • 1 1/3 c Whole wheat flour

Directions

  1. Mix in a large bowl, first seven ingredients: zucchini,sugar, milk, eggs,oil,honey,and vanilla the wet ingredients. In another bowl, mix dry ingredients: cinnomon, cloves,baking soda,soda, salt and flour. Mix just until they combine together. Place into oiled sprayed 8x4 loaf pan. Bake at 350 for 45 minutes. Let bread rest until cool 10 minutes then remove from pan.
  2. Variation: Add 1/2 c cocoa powder to dry ingredients and 1/2 c mini chocolate chips.
