Yogurt Biscuits with Dill

Makes 9 biscuits

It's hard to find a good biscuit without shortening. This one is great! The yogurt acts similarly to buttermilk, and helps the biscuits rise. I also make these without dill, to eat with butter and honey.

You can cut them using round cutters if you prefer, but cutting them in squares is much easier, and keeps you from having to over-handle the dough.

Ingredients

  • 2 cups all-purpose flour
  • pinch of salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup or butter
  • 1 cup low-fat Greek yogurt
  • 1/4 cup fresh dill, roughly chopped

Directions

  1. Preheat oven to 450.
  2. Mix dry ingredients in food processor bowl.
  3. Add butter and mix, pulsing until very fine mealy texture.
  4. Place in mixing bowl and stir in yogurt and dill.
  5. Place dough on a lightly floured surface and knead 10 times.
  6. Press out the dough into a square, until it is about 3/4 inch thick.
  7. Cut out biscuits into 9 squares. (like a tic-tac-toe board).
  8. Place biscuits on an ungreased baking sheet and bake for 7 to 9 minutes at 450.
