Yellow Pumpkin or Squash Kheer

Ingredients

  • 1 cup grated pumpkin
  • 1 1/2 cup sugar
  • 7 cashews
  • 2 drops vanilla essence
  • 1 litre milk
  • 2 tablespoon ghee
  • 7 Raisins

Directions

  1. Heat ghee in a pan. Fry the cashewnuts and raisins. Remove and keep aside.
  2. To the same pan, add the grated pumpkin. Saute for 2 to 3 minutes.
  3. Bring the milk to a boil and add the pumpkin. Simmer for a minute or two.
  4. Add sugar and simmer until reduced by half.
  5. Add vanilla essence, cashewnuts and raisins. Gently mix and serve.
