I owe this recipe from my friend Woodrow who unselfishly shared this old-time favorite Filipino food which dates us to the Spanish era. What makes unique about Woodrow's maja is the egg mixture.

Directions

  1. Extract milk of coconut using 1 cup of water. set aside.
  2. Strain cornstarch using the 40 cups of water through a coarse cheesecloth. Cook over medium heat, stirring constantly.
  3. Add the milk and sugar. Stir until blended.
  4. Add the coconut milk and margarine little by little to avoid burning, stirring constantly.
  5. When the mixture is thick as paste, add the beaten eggs,and sweet corn stir until well-blended.
  6. Pour into plastic molders and let it cool. Freeze. Serve cold.
