.%20When%20it's%20finished,%20I%20will%20begin%20to%20add%20kitchen%20scraps%20and%20yard%20waste%20to%20replenish%20it%20and%20use%20it%20later%20in%20the%20summer.%3C/p%3E%3Cp%3EWe%20continue%20to%20have%20a%20few%20grape%20and%20roma%20tomatoes,%20but%20nothing%20to%20write%20home%20about.%3C/p%3E%3Cp%3EAnd%20my%20heirloom%20tomato%20teases%20me%20with%20what%20looks%20like%20emerging%20blossoms,%20but...nothing%20yet.%3C/p%3E%3Cp%3EThose%20nasty%20little%20leaf%20bugs%20make%20my%20poor%20sweet%20potato%20vine%20look%20like%20it's%20been%20hit%20with%20shotgun%20pellets...%3C/p%3E%3Cp%3Ebut%20I%20don't%20feel%20so%20bad%20after%20a%20visit%20to%20the%20Memphis%20Zoo%20over%20the%20weekend.%20Their%20sweet%20potato%20vines%20look%20just%20like%20mine.%20But,%20I%20still%20refuse%20to%20use%20poison.%3C/p%3E%3Cp%3ESadly,%20as%20you%20can%20see,%20my%20yard%20is%20not%20flourishing,%20but%20I%20still%20have%20ample%20herbs%20for%20cooking.%20I%20may%20just%20have%20to%20visit%20the%20Farmer's%20Market%20here%20in%20Conway.%20It's%20open%20Tuesday,%20Thursday%20and%20Saturday.%20I%20suppose%20a%20trip%20there%20tomorrow%20morning%20for%20fresh%20vegetables%20might%20be%20a%20good%20idea.%3C/p%3E%3Cp%3ELast%20week,%20as%20I%20was%20prepping%20for%20the%20weekend%20in%20Memphis,%20I%20was%20watching%20Food%20Network%20off%20and%20on%20(mainly%20to%20avoid%20the%20entire%20All-Michael-Jackson-All-The-Time%20thing%20that%20permeated%20every%20other%20channel)%20and%20I%20happened%20to%20catch%20an%20episode%20of%20Everyday%20Italian.%20This%20time%20Giada%20DeLaurentis%20was%20preparing%20a%20salmon%20dish%20with%20a%20lemon%20broth%20and%20pea%20puree.%20It%20looked%20really%20beautiful,%20light,%20tasty%20and%20easy%20to%20make%20so%20I%20thought%20I'd%20give%20it%20a%20whirl.%3C/p%3E%3Cp%3EI%20didn't%20have%20salmon%20in%20the%20freezer,%20but%20I%20did%20have%20some%20nice%20Ahi%20Tuna%20I%20bought%20at%20Sam's%20Club%20a%20couple%20of%20weeks%20ago%20and%20froze%20for%20just%20such%20an%20occasion.%20And,%20lucky%20me,%20I%20found%20a%20bag%20of%20peas%20in%20the%20freezer%20as%20well.%3C/p%3E%3Cp%3EI%20cut%20Giada's%20recipe%20in%20half%20because%20I%20was%20just%20preparing%20the%20dish%20for%20the%20two%20of%20us,%20but%20it%20still%20made%20two%20very%20large,%20satisfying%20servings.%20I%20followed%20the%20recipe%20except%20that%20I%20substituted%20the%20salmon%20with%20tuna%20and%20left%20out%20the%20mint%20altogether%20(you%20may%20remember%20I%20ripped%20out%20my%20skanky%20looking%20mint%20plant%20weeks%20ago).%20But,%20since%20I%20don't%20really%20care%20for%20much%20for%20the%20flavor%20of%20mint%20anyway,%20I%20didn't%20miss%20it.%20I%20personally%20don't%20think%20the%20dish%20suffered.%20It%20was%20delicious%20and%20fresh%20tasting,%20and%20I%20can't%20wait%20to%20make%20it%20again.%3C/p%3E%3Cp%3EWhat%20follows%20is%20the%20recipe%20as%20I%20prepared%20it,%20but%20you%20can%20get%20Giada's%20original%20recipe%20here.%3C/p%3E%3Cp%3EAhi%20Tuna%20in%20Lemon%20Brodetto%20with%20Pea%20Puree%3C/p%3E%3Cp%3EAdapted%20from%20Giada%20DeLaurentis'%20recipe%20@%20Everyday%20Italian%3C/p%3E%3Cp%3ETo%20Make%20Lemon%20Brodetto:%20Warm%20the%20olive%20oil%20in%20a%20small%20saucepan%20over%20medium%20heat.%20Add%20the%20shallots%20and%20saute%20until%20tender%20and%20translucent.%20Add%20the%20lemon%20juice,%20lemon%20zest%20and%20broth.%20Bring%20to%20a%20simmer%20and%20keep%20warm,%20covered,%20over%20low%20heat.%3C/p%3E%3Cp%3ETo%20Make%20the%20Pea%20Puree:%20Combine%20the%20thawed%20peas,%20garlic,%20salt%20and%20pepper%20in%20a%20food%20processor%20and%20puree.%20With%20the%20machine%20running,%20add%20the%20olive%20oil%20in%20a%20steady%20drizzle.%20Transfer%20the%20pea%20puree%20to%20a%20small%20bowl%20and%20stir%20in%20the%20Parmesan.%20Set%20aside.%3C/p%3E%3Cp%3ETo%20Make%20the%20Tuna:%20Warm%20the%20olive%20oil%20in%20a%20large,%20heavy%20skillet%20over%20high%20heat.%20Season%20the%20tuna%20with%20salt%20and%20pepper.%20Sear%20the%20tuna%20until%20a%20slight%20golden%20crust%20forms%20on%20the%20first%20side,%20about%204%20to%205%20minutes.%20Flip%20the%20fish%20and%20continue%20cooking%20until%20medium-rare,%20about%202%20minutes%20more%20depending%20on%20the%20thickness%20of%20the%20fish.%3C/p%3E%3Cp%3ETo%20Assemble:%20Divide%20the%20Lemon%20Brodetto%20between%202%20dishes.%3C/p%3E%3Cp%3EPlace%20a%20large%20spoonful%20of%20Pea%20Puree%20into%20the%20center%20of%20each%20bowl.%3C/p%3E%3Cp%3EPlace%20the%20tuna%20piece%20on%20top%20of%20each%20mound%20of%20Pea%20Puree.%3C/p%3E%3Cp%3EServe%20immediately.%3C/p%3E%3Cp%3EDebbie%20@%20The%20Friday%20Friends%20is%20on%20vacation,%20but%20check%20out%20her%20blog%20for%20what's%20outside%20her%20kitchen%20window.%3C/p%3E%3Cp%3EKaren%20@%20%20Karen%20Cooks%20may%20also%20be%20on%20vacation,%20but%20do%20take%20a%20look%20at%20her%20beautiful%20peonies%20outside%20her%20kitchen%20window.%20I%20covet%20them.%3C/p%3E){kind=link}
