.%20%20It's%20planted%20in%20a%20row%20and,%20as%20it%20grows,%20one%20picks%20off%20the%20bigger%20leaves%20to%20use.%20%20It's%20lighter%20and%20thinner%20than%20head%20lettuce,%20and%20is%20best%20used%20shortly%20after%20picking.%3C/p%3E%3Cp%3EIt's%20perfect%20for%20this%20classic%20salad.%20%20As%20is%20my%20new%20favorite%20vinegar:%20Apple%20Balsamic.%3C/p%3E%3Cp%3EWash%20lettuce%20and%20spin%20dry.%20%20Pile%20it%20up%20and%20cut%20it%203%20or%204%20times%20with%20a%20large%20knife.%20%20Roughly%20chop%20dill.%3C/p%3E%3Cp%3EChop%20the%20onion%20and%20slice%20bacon%20into%20matchsticks.%20%20Heat%20oil%20in%20a%20very%20large%20skillet.%20%20Add%20onion,%20bacon%20and%20fry%20until%20bacon%20it%20crisp.%20%20Add%20vinegar%20(and%20sugar)%20and%20heat%20through.%3C/p%3E%3Cp%3ERemove%20skillet%20from%20heat,%20add%20lettuce%20and%20dill.%20%20It%20may%20not%20all%20fit%20at%20first.%20%20Using%20a%20tongs,%20carefully%20turn%20and%20toss%20the%20lettuce,%20coating%20it%20the%20vinegar%20bacon%20mixture.%20%20Add%20more%20lettuce%20as%20the%20lettuce%20in%20the%20skillet%20wilts%20down,%20until%20all%20added.%20%20Give%20it%20one%20final%20toss,%20serve%20and%20eat%20immediately.%3C/p%3E%3Cp%3ERemember:%20It's%20supposed%20to%20be%20wilted%20-%20not%20cooked.%3C/p%3E%3Cp%3EIf%20you%20don't%20have%20a%20kitchen%20scale%20-%20basically%20you%20want%20enough%20lettuce%20for%204%20large%20salads.%20You%20will%20look%20at%20it%20and%20think%20it's%20way%20too%20much.%20%20You%20will%20be%20wrong.%20It%20will%20wilt%20down%20to%20a%20perfect%20salad%20for%20two.%3C/p%3E){kind=link}
