%3C/p%3E%3Cp%3EI'm%20fairly%20certain%20that%20I%20have%20an%20issue%20with%20tapioca%20starch%20(an%20issue%20being%20that%20it%20gives%20me%20the%20most%20terrible%20smelling%20gas%20EVER)%20but%20I%20really%20need%20to%20do%20an%20elimination%20diet%20to%20be%20sure.%20The%20Whole%2030%20seems%20like%20the%20most%20straight%20forward%20way%20for%20me%20to%20do%20that.%20Plus%20I%20like%20the%20idea%20of%20not%20%22dieting%22%20but%20just%20cleaning%20up%20what%20I%20eat.%20I%20eat%20fairly%20healthy%20now%20but%20typically%20follow%20the%2080/20%20rule.%2080%25%20healthy%20foods%20and%2020%25%20treats,%20like%20gluten%20free%20donuts.%20And%20I'm%20pretty%20sure%20that%2020%25%20category%20is%20what's%20leaving%20me%20in%20gastric%20distress.%3C/p%3E%3Cp%3EAnd%20at%20the%20same%20time....I%20love%20creamy%20foods.%3C/p%3E%3Cp%3ESour%20cream,%20cream%20cheese,%20sharp%20cheddar,%20and%20ranch%20are%20some%20of%20my%20favorite%20foods.%20Coupled%20with%20the%20fact%20that%20breastfeeding%20gives%20me%20a%20hunger%20like%20no%20other,%20and%20let's%20just%20say%20that%20my%20will%20power%20is%20very%20low%20right%20now.%20Plus%20I%20don't%20exactly%20have%20a%20lot%20of%20extra%20time%20to%20meal%20plan%20or%20food%20prep,%20so%20if%20I'm%20going%20to%20do%20the%20Whole%2030,%20I%20have%20to%20be%20prepared%20beforehand.%3C/p%3E%3Cp%3EBut%20being%20gluten%20free,%20I'm%20already%20accustomed%20to%20making%20most%20of%20my%20own%20meals.%20Add%20to%20that%20having%20a%206%201/2%20month%20old%20baby,%20and%20I'm%20not%20exactly%20dining%20out%20a%20lot.%20So%20really,%20now%20is%20the%20perfect%20time%20for%20me%20to%20try%20the%20Whole%2030%20-%20I%20don't%20know%20why%20it%20feels%20so%20hard.%3C/p%3E%3Cp%3ENot%20hard:%20my%20supper%20last%20night.%20It%20came%20together%20so%20easily,%20and%20imagine%20my%20surprise%20when%20I%20realized%20that%20my%20entire%20meal%20was%20actually%20Whole%2030%20compliant%20-%20including%20my%20creamy%20potatoes!%3C/p%3E%3Cp%3EThese%20potatoes%20are%20super%20easy%20to%20make%20-%20served%20alongside%20grilled%20steaks%20and%20a%20salad,%20it's%20a%20real%20weeknight%20treat!%3C/p%3E%3Cp%3EYou'll%20need:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450%20degrees.%3C/p%3E%3Cp%3EPlace%20the%20potatoes%20in%20a%20large%20pot%20and%20fill%20with%20just%20enough%20water%20to%20cover%20plus%20one%20inch.%20Bring%20to%20a%20boil,%20then%20simmer%20with%20a%20lid%20on%20until%20the%20potatoes%20are%20fork%20tender.%20Drain%20and%20let%20the%20potatoes%20cool%20for%20just%20a%20few%20minutes.%3C/p%3E%3Cp%3EHeat%20your%20coconut%20oil%20to%20make%20it%20easy%20to%20drizzle.%20Drizzle%20a%20small%20amount%20of%20coconut%20oil%20%20onto%20a%20baking%20sheet.%20Using%20a%20fork,%20flatten%20each%20potato%20and%20place%20onto%20baking%20sheet.%20Drizzle%20the%20tops%20with%20coconut%20oil%20and%20bake%20for%2015-20%20minutes,%20or%20until%20the%20tops%20begin%20to%20crisp%20and%20brown.%3C/p%3E%3Cp%3EUsing%20an%20immersion%20blender,%20blend%201/2%20cup%20Tessemae's%20dressing%20with%20one%20egg.%3C/p%3E%3Cp%3EOnce%20blended,%20drizzle%20in%20coconut%20oil%20until%20you%20get%20your%20desired%20consistency.%20I%20went%20for%20a%20little%20bit%20runny%20but%20not%20watery,%20like%20a%20dressing.%3C/p%3E%3Cp%3EDrizzle%20the%20baked%20potatoes%20and%20then%20top%20with%20chopped%20scallions.%20Serve%20hot.%3C/p%3E){kind=link}
