  • One Watermelon Radish (Rinse well) I use a mandoline to slice thinly
  • 1/2 cup sour cream
  • one lemon (juice only)
  • several fresh springs rosemary chopped super finely
  • Several bunches scallions (cleaned, cut ends)
  • 2 dozen multi-grain thin crackers (as shown) Or you can use toasted bread slices or crackers of your choice

Directions

  1. In a mixing bowl add sour cream and lemon juice, chopped rosemary and stir well, refrigerate until ready to use
  2. Cut ends off scallions and rinse clean
  3. Slice watermelon radish (I use a mandoline for thin slices)
  4. Spread sour cream mixture on cracker base, add several slices of watermelon radishes, topped with a scallion
  5. Plate and serve.
