Watercress & Carrot Salad

Ingredients

  • 1 cup chopped watercress
  • 1 small carrot shredded
  • 2 tablespoons chopped red onion
  • 1 tablespoon lemon juice or more according to taste
  • salt and pepper to taste

Directions

  1. Mix chopped watercress and shredded carrot and chopped onion
  2. add salt, pepper and lemon juice
  3. Mix well and serve with rice as a side accompaniment

Even though I called this recipe “salad”, we eat this with rice as a side dish. But it can be eaten as a standalone salad with salad dressing but the watercress does not need to be chopped very small.
