This is a great salad to serve for lunch or with Fried Chicken for dinner. It's easy to prepare, has few ingredients and tastes delicious. It always reminds me of dinning alfresco on a summers' evening. It's just as good heated up the next day too.

  • Small box of Gourmet Potatoes (new potatoes are best)
  • 1/2 pound streaky bacon, chopped small
  • 3 Spring Onions, chopped
  • Dressing
  • 1 cup of your favourite mayonnaise (I like Best Foods from Canada)
  • 1 tsp grainy prepared mustard
  • 1-2 Tbs oil used to cook bacon in
  • Freshly ground black pepper

Directions

  1. Place potatoes in a pot of salted water and bring to the boil.
  2. Turn down the heat to gently simmer them until just done.
  3. While the potatoes are cooking, fry the bacon in a little oil until crisp, remove the bacon to a paper towel, saving the oil for the dressing.
  4. Combine the dressing in a small bowl and set aside.
  5. When potatoes are done, drain, cut in half and place on serving platter.
  6. Drizzle the dressing over the potatoes.
  7. Toss the bacon and spring onions on top and season with freshly ground black pepper.
