Grilling in the summer usually means burgers, hot dogs, steaks and ribs, but what if you have to cater to vegetarians during your next summer BBQ? Instead of dividing the grill into sections for the meat eaters and non, try cooking dishes that are sure to please everyone. These vegetarian grilling dishes are bold in flavor, but not in budget.

Ingredients

  • 2 teaspoons of vegetable oil
  • 1 cup of quartered, sliced onion
  • 1 cup of red, green or yellow bell pepper strips
  • 1 15-ounce can of black, pinto or kidney beans - drained
  • 1/2 cup of fresh or frozen whole kernel corn
  • 1 package of taco seasoning mix
  • 1/3 cup of water
  • 6 large flour or corn tortillas

Directions

  1. Preheat your grill to a medium temperature.
  2. Grill vegetables in a skillet or pan with vegetable oil for around 5 minutes or until vegetables are tender.
  3. Stir in beans, corn, taco seasoning mix and water for an additional five minutes.
  4. Remove from heat and place tortillas on a turned off grill for around 1 minute on each side.
  5. Watch carefully so tortillas don't burn.
  6. Add your ingredients to your tortilla, add salsa, guacamole or sour cream.
  7. Fold in half and enjoy.
