Vegetarian Chopped Liver Recipe

This vegetarian version is so good, it tastes like the real thing. Its delicious at a traditional holiday meal or at a party as an appetiser. No one can believe it is made from just four vegetarian ingredients.Try it , you'll like it.

  • 1 can of young and tender of sweet peas, drained
  • 1 cup of walnut halves or pieces
  • 2 very large Spanish onions, sliced in half moons
  • 3 Tablespoons olive oil

Directions

  1. Saute and stir onions very slowly over low heat until carmelized
  2. and then set aside.
  3. Use a food processor with the sharp blade
  4. Add the walnuts and pulse until coarsely ground but not smooth.
  5. Then add drained peas and cooked onions, sea salt and pepper to taste
  6. Pulse until mixture is smooth.
  7. Place chopped liver mixture into a small domed bowl that has been sprayed with olive oil spray and let it sit for about 10 minutes in the refrigerator
  8. Remove from refridgerator and turn over onto a flat serving plate and decorate with tomato wedges and cucumber slices on the side.

    Don't worry about the cholesterol. This vegan version is so delicious you won't even realize its not the real thing.! Even meat eaters love it! makes a perfect appetizer with crackers or crudite.
