Vegan Mufaletta (spoken in a Bobby Flay accent) Recipe
Ingredients
- 2 or 3 portabello mushrooms
- Olive oil
- 3 or 4 cloves of garlic, smashed or chopped
- 1 jar roasted red peppers; you can also use the multi colored roasted peppers if you choose
- 1 jar olive 'spread' or you can make it yourself... I have done both
- 1 walla walla sweet onion
- Salt and pepper

%3C/p%3E%3Cp%3EThere%20are%20two%20things%20we%20like%20to%20do%20in%20our%20house;%20ok,%20there%20are%20more%20than%20two%20things%20we%20like%20to%20do.%20We%20like%20to%20do%20a%20lot%20of%20things%20in%20our%20house%20but%20two%20of%20them%20are%20eat%20and%20watch%20Food%20Network%20before%20bedtime.%20That%20means%20we%20get%20a%20lot%20of%20Bobby%20Flay's%20throwdown.%20We%20watched%20one%20a%20while%20back%20that%20was%20a%20mufaletta%20throwdown.%3C/p%3E%3Cp%3EBeing%20that%20I%20don't%20eat%20meat,%20I%20thought%20it%20would%20be%20great%20to%20come%20up%20with%20a%20vegan%20version%20of%20the%20mufaleletta.%20Mainly%20because%20Honey%20kept%20talking%20(in%20Bobby%20Flay%20accent)%20about%20how%20much%20he%20wanted%20a%20mufaletta.%20Now%20it's%20his%20favorite%20meal%20and%20he%20likes%20to%20tell%20everyone%20how%20good%20it%20is;%20in%20his%20Bobby%20Flay%20accent.%20I%20mean,%20what%20mufaletta%20is%20complete%20without%20that?%20Apparently%20no%20mufaletta.%3C/p%3E%3Cp%3EIt%20is%20super%20easy%20to%20make%20and%20makes%20great%20picnic%20food.%20Toss%20in%20some%20salad,%20%20a%20bottle%20of%20wine%20and%20your%20Bobby%20Flay%20accent%20and%20you're%20good%20to%20go.%20Bonus:%20if%20you%20live%20in%20the%20area%20(or%20an%20area%20that%20has%20this)%20eat%20your%20fantastic%20picnic%20at%20a%20concert%20in%20the%20park...%20music%20goes%20great%20with%20mufaletta%20(and%20Bobby%20Flay%20accent).%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3E1%20loaf%20of%20artisan%20bread%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3ESlice%20the%20bread%20lengthwise%20(the%20whole%20thing)%20and%20scoop%20out%20most%20of%20the%20soft%20middle.%20You%20can%20save%20the%20soft%20middle%20for%20breadcrumbs%20or%20feeding%20to%20the%20birds%20or%20feeding%20to%20yourself,%20dipped%20in%20olive%20spread%20while%20you%20put%20your%20sandwich%20together.%3C/p%3E%3Cp%3EDe-stem%20the%20portabello%20mushrooms%20so%20you%20have%20just%20caps.%20With%20a%20spoon,%20gently%20scrape%20the%20'gills'%20out%20of%20the%20cap.%20Don't%20worry%20about%20getting%20'all'%20the%20gills,%20just%20get%20most;%20do%20your%20best.%3C/p%3E%3Cp%3EHeat%20a%20pan%20with%20a%20little%20oil%20and%20garlic,%20then%20add%20the%20portabello%20mushrooms.%20Cook%20the%20mushrooms%20until%20they're%20soft,%20then%20remove%20and%20lay%20on%20a%20towel%20to%20soak%20up%20any%20extra%20moisture.%3C/p%3E%3Cp%3ESlice%20the%20walla%20walla%20sweet%20onion%20in%20large%20pieces%20and%20sautee%20in%20the%20same%20pan%20you%20used%20for%20the%20mushrooms%20until%20soft%20and%20brown.%20Set%20aside%20for%20a%20bit.%3C/p%3E%3Cp%3ESpread%20the%20olive%20'spread'%20that%20you%20have%20either%20bought%20or%20made%20onto%20both%20sides%20of%20the%20hollowed%20out%20bread.%20Lay%20the%20roasted%20red%20peppers%20over%20top%20of%20the%20'spread'.%20ps...%20I%20will%20post%20that%20spread%20recipe%20in%20a%20bit.%3C/p%3E%3Cp%3EOn%20top%20of%20the%20roasted%20red%20peppers,%20lay%20the%20portabellos%20that%20you%20cooked.%20On%20top%20of%20that,%20pile%20on%20the%20onions.%3C/p%3E%3Cp%3ETop%20with%20a%20little%20salt%20and%20pepper%20and%20close%20up%20your%20little%20masterpiece.%20Wrap%20it%20TIGHTLY%20in%20saran%20wrap.%20The%20point%20is%20that%20you%20want%20it%20to%20get%20smashed%20down.%20I%20wrap%20it%20up%20and%20then%20put%20it%20in%20the%20fridge%20with%20my%20LeCreuset%20lid%20on%20top,%20to%20smash%20it%20down.%20Let%20it%20go%20for%20a%20while...%201/2%20hour%20or%20so.%20Pull%20it%20out,%20slice%20it%20and%20enjoy!%20yummm%20:)%3C/p%3E%3Cp%3EIt's%20super%20easy;%20especially%20if%20you%20use%20the%20jarred%20olive%20spread.%20Like%20I%20said,%20I've%20done%20it%20both%20ways:%20homemade%20spread%20and%20jarred%20spread;%20they%20are%20both%20good.%20With%20the%20jarred%20spread,%20I%20usually%20add%20some%20fresh%20parsley%20and%20marjoram%20from%20my%20garden,%20and%20if%20I'm%20feeling%20really%20sassy,%20some%20freshly%20chopped%20garlic,%20which%20makes%20it%20taste%20more%20homemade.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
