  • 1/2 c. vegan granulated sugar
  • Egg replacer, equivalent to 3 eggs, prepared according to package instructions
  • 1-1/2 tsp. lemon extract
  • 1 tsp. freshly grated lemon zest
  • Icing:
  • 3 c. vegan powdered sugar
  • 1/4-1/2 c. cold water
  • 1 tsp. lemon extract
  • 1/2 tsp. lemon zest
  • Garnish (either is optional)
  • Rainbow sprinkles
  • Fresh mint leaves
